Well despite my undying love of pasta, I've never made it from scratch. Shocking I know, but I am without pasta machine. So a Monday evening was the night it was going to happen. I decided to make tortellini and to fill it with the closest things to hand, spinach, ricotta and chorizo.
I fried the very finely diced chorizo and the wilted the spinach in the same pan. Drained most of the juices, the added ricotta, parmesan, pepper, nutmeg, lemon zest and oregano. That out of the way, I put it in the fridge and got on with the dough. Type 'OO' four and eggs, brought together and then needed until the gluten stretched. So far so good, I put this in the fridge to relax for half and hour.
The problem I had without the pasta machine was with the rolling of the dough. The pasta for tortellini has to be extra thin as it meets in places. It needs to be translucent and the best way to do this is to roll out small pieces at a time. Golf ball sizes. Yes its hard work and takes a bit of time, but if you don't want to be spending time on making your own pasta, then you should probably buy it in.
I boiled the little tortellini's in salted water for about 4 minutes and then tossed them along with some of the pasta water in some of the left over pizza sauce. Sprinkled it with mozzarella and fresh herbs. I am happy with my first attempt, please can someone buy me a pasta machine so I can make linguine.
